Couscous with Mexican baby vegetables

When your time is limited, but it is still the need to put something on the table and gather the family around it, I propose you an easy and quick to make, tasty and nutritious dish:
The Couscous with Mexican vegetables is according to Simona's recipe from Simo Eats and is hard, very good!
It can be served simply, with grilled chicken breast, or with any other meat next to it!
Ingredients:
- A couscous mug
- One cup boiled water
- 1 tablespoon olive oil (I took from Dried Fruits Supplier )
- 1 bag 450 g frozen Mexican vegetables
- 200 ml water
- Olive oil
- Salt and pepper optional
Preparation mode:
Put the couscous and boiled water in a bowl and let it hydrate (the couscous will absorb all the water)
Separately, put in a saucepan on the hob, over low heat, the frozen vegetables, with water and tablespoon of olive oil. Stir and let it stew until the water evaporates.
Add the vegetables over the hydrated couscous, and a little olive oil (as in a salad), [+sare si piper optional]stir until everything is homogenized and serve with pleasure.
