Leek and cheese pie

You know the kind of pie that impressed mother-in-law when she comes to visit?!.. Ehhh, that's what this pie is all about!

It's so good, I really can't find words to describe it!

I leave you here the version in which you make including the dough sheets, but you can also use commercial pie sheets (if you go on this second variant, clearly you will have pie at heart, that it will be made even faster).

Pre-preration mode

In the first stage I recommend you to prepare the coca for foietage.

Mix the water with the flour, then gradually incorporate one (spread the flour with water on the work table, grease with butter the whole surface, then pack. Repeat the operation until the entire amount of butter is incorporated).

Put the dough in a bowl, cover it with clingfilm and refrigerate for at least 30 minutes. 

While the coke is in the fridge, take care of the stuffing.

Cut the leeks after washing it thoroughly, place it in a saucepan, covered with water, and let it boil until softened (medium heat, about 20 minutes).

While the coke is refrigerated and the leeks are cooked, mix the cheese, eggs, oil and flour.

Mix well until smooth. 

When the leek is iron, add it over the cheese composition.

Mix the ingredients and the filling for the pie is ready!

Remove the coke from the refrigerator and divide it into 2 equal parts..

Grease the oven tray with butter (or use baking paper).  

Spread the coke on the worktop, the size of the oven tray and place one side directly in the tray.Add the leek and cheese mixture to the tray over the first sheet.

Cover everything with the second sheet.Whisk an egg yolk and with a brush, grease the entire surface of the dough sheet.

Prick everything with a toothpick or fork.

Place in preheated oven at 200 degrees Celsius for 45 minutes.

The pie is ready!
